February's Sweet Treat - No Bake Protein Oatmeal Cookies

No Bake Protein Oatmeal Cookies (Makes approximately one dozen medium sized cookies)

In a sauce pan slowly melt on medium heat (must stir the ingredients so they do not burn to the pan) -

2/3 cup All Natural Peanut Butter

1 Heaping tablespoon Agave Syrup

2 Tablespoons of cocoa powder

Once ingredients are mixed and melted together reduce the heat to low and add -

1 Cup of Oats

Mix the oats and wet mixture.  Once the oats have been completely coated

Add -

1 Heaping Scoop of Vanilla Protein Powder (I used Try About Time)

Begin to mix in the protein powder, the mixture will be too dry so

Add -

1-3 Tablespoons of hot water (add water slowly so the mix reaches the consistency of sticky to roll into small - medium sized balls)

Eat warm or place on parchment paper and refrigerate for 2 hours and eat cold!

Healthy Gluten Free Peanut Butter Banana Bread (Makes 2 Loaves)

90% of us have over ripened bananas sitting in our kitchen……. Here is a healthy gluten free treat for your family!

5-6 Over ripened bananas

2 ½ Cups Bob’s Red Mill Garbanzo and Fava flour

¾ Cup all natural peanut butter

1/3 Cup olive oil

1 Tsp baking powder

1 Tsp baking soda

Mix the above ingredients in a mixing bowl

Add: (NOTE:  Slowly mix in the agave syrup, occasionally tasting the batter so the sweetness is to your liking)

½ - 1 Cup of organic agave syrup (I did not measure my agave syrup, I added enough to get the batter to the sweetness of my liking)

Preheat oven to 350 degrees

Pour half of the batter into one greased loaf pan and pour the other half into a second greased loaf pan

Bake for a solid 30 minutes.  Check for doneness by sticking a butter knife into the center of the breads.  Continue baking and checking the bread every five minutes until the center of the breads are done.  My oven baked the breads in approximately 40-45 minutes.
