Quinoa Stir fry
March is National Nutrition Month! Make sure you strive to obtain all your vitamins and minerals from natural foods - Fruits, Vegetables, and Lean Cuts of Meat. The more color on your plate the more nutrients you will receive!
Quinoa Stir Fry
1 Cup dry quinoa
10 Snacking carrots diced
1 Medium onion diced
1 Clove minced garlic
3-4 Cups baby spinach
1 Can garbanzo bean (rinsed and drained)
1 Tablespoon fresh ginger minced
3 Medium tomatoes diced
Olive oil
Optional 2 grilled chicken breast diced (I am vegetarian so no meat for me!)
Directions -
Cook the quinoa by bringing the one cup of quinoa and 2 cups of water to a boil, once brought to boiling turn the burner down to where the water is simmering with the quinoa, stir the quinoa until most of the water has been absorbed, turn off the burner and let the quinoa sit until you are ready to add it into the stir fry
In a large deep frying pan saute the diced onions, carrots, and garlic in olive oil until they are softened.
Add in the garbanzo beans, quinoa and optional diced grilled chicken (you may need to add a little more EVO to prevent the mixture from sticking to the pan)
Now add in the spinach and cover your pan so the steam will wilt the spinach. Once spinach has been wilted stir the mixture to blend the flavors.
Add in the diced tomatoes continue stirring the mixture to blend the flavors
Lastly, add the fresh minced ginger and stir it into the mix
Serve up as a main dish alone or scoop some over mixed greens for more nutrient power!
